Duduo Powder Hot Pot

This fiery hot pot, where chopsticks vie for every bite, traces its roots to Anshun, Guizhou.

Originating on Anshun's streets, it began as a snack where students would use bamboo chopsticks to “duduo” (meaning to poke) and dip glutinous rice tofu after school. Today, it has evolved into a communal hot pot, radiating rustic charm as it has swept from Guizhou to captivate palates across the nation.

The soul of the pot lies in its fermented sour broth, simmered with fermented maola fruit. Its tangy aroma instantly awakens the palate. Rice tofu, cooked until tender and soft, soaks up the rich broth. Paired with crispy pork, soft pork ear, and other abundant toppings, then dipped in a paste of chili and fermented bean paste, the interplay of sour, spicy, and savory flavors creates an irresistible experience.
